Contrary to what you might think, the sugar cane comes from Europe, more precisely from the island on which the distillery is located. The cane is pressed to extract the juice, which is then fermented and used as the basis for the Aldea distillation process. The Quevedo family, who make this top-of-the-range rum, not only use American oak barrels, but also French oak (Allier) barrels for this masterpiece.
