The Arcadian series represents our garden of otherworldly delights. We've sought out non-conformist farmers, inspirational growers, iconoclasts whose ethics and lifestyles respect the earth and ancient methods in the pursuit of pure flavor rather than the imperatives of yield. Gaia, the Neopagan goddess of old, a personification of Mother Earth herself, is a fitting guardian to produce the first Irish whiskey distilled from certified organic Irish barley.
John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris took up our challenge to produce the first organic malting barley grown in Ireland. Given the low yield of organic barley, it's important to note that we combined these crops into a single batch prior to distillation.
Nose: Rich aromas of tropical fruit, vanilla and spicy oak emerge delicately from the glass. Mouth: On the palate, notes of caramel, ripe banana and black pepper blend harmoniously for a complex taste experience. Finish: The finish is long and warm, leaving a gentle sensation of ginger and toasted oak on the palate.
Yellow Spot 12 year old Single Pot Still Irish Whiskey is proudly produced exclusively for Mitchell & Son Wine Merchants, Dublin, where the brand was born. This whiskey contains single pot still components aged in ex-bourbon, ex-sherry and ex-malaga wine casks. This maturation gives this whiskey more complexity than its little brother Green Spot, but allows the more complex aspects of the Single Pot Still spirit to be explored in greater depth.
