Aged in hand-selected ex-Bourbon and Oloroso sherry casks before being finished in a first fill Pedro Ximenez Sherry cask, gives our 21 Year Old a rich and intriguing persona.
Nose: Punchy sweet oak and fresh vanilla pods, mingled with toasted coconut and flaked almonds. Notes of lemon zest and poached, spiced pears emerge with time.
Palate: A wonderful balance of Speyside fruit and oak spice. Sweet cinnamon sugar, vanilla custard, and melting banana toffee, layered with earthy nuts and a distinct caramelised warmth from the toasting.
Finish: Long, warm, and slightly dry, featuring lingering oak spice, fennel, and subtle hints of menthol and tobacco.
We have the pleasure in presenting both the finished whisky and the final sherry in this limited edition of Whisky Meets Sherry. This whisky has drawn incredible influences and as a result showcases a range of dried and exotic fruits with cocoa and nutty notes. It is silky smooth and slightly drying in the finish.
Nose: A complex tapestry of tobacco leaves and heather, sweetened by rich toffee treacle and beeswax.
Mouth: A complex, cosmopolitan mix of sweetness, barbecued meat, berries and a whisper of salty smokiness.
Finish: Rounded, sweet woods and gentle smoke linger expressively on the tongue as a lasting memory.
