Heaven Hill Distillery is one of the few distilleries producing this type of whisky. It was inspired by corn whisky making in the 19th century, when many products were stored and transported in wooden casks. It was soon noticed that barrel storage gave spirits a rounded aroma with character. Today, unlike bourbon, which must be aged in recently burned casks, corn whiskey is aged in casks formerly used for bourbon.
Corn whiskey mash is 80% corn, 12% malted barley and 8% rye. Corn whiskey is aged for 4 years, giving it its pale straw color. On the nose, there are hints of oak and delicate spices, while on the palate, there's a mellow, spicy sweetness that carries through to the finish.
