The indigenous Räuschling variety is grown on only 20 hectares, mainly in the canton of Zurich. It is therefore considered a special rarity. The wine is aged mainly in steel vats, partly on lees in 500-liter wooden barrels. Its mineral freshness and subtle fruity-floral aroma make it an ideal companion for freshwater fish.
