Based in Port-of-Spain, TDL cultivates its own yeast strain that adds individuality to its sugarcane molasses fermentation. The fermentation process lasts around 48 hours and is left to rest for several more days to enhance flavor development before distillation. This vintage was initially aged in Trinidad using heavily charred first-fill Bourbon casks and rum barrels formerly used in our European winery, giving it a rich dark color.
Nose: Barbancourt 15 ans Volcanic Cane offers complex aromas of vanilla, spice and tropical fruit, with woody notes and a light touch of caramel.
